375g soft unsalted butter
375g best-quality dark choc
6 large eggs
1 tbsp vanilla extract
500g caster sugar
225g plain flour
1 tsp salt
300g chopped walnuts (optional)
tin measuring approx 33x23x5.5cm
Preheat the oven to 180 c gas mark 4. Line tin with foil or parchment.
Melt butter and chocolate together in large heavy based pan. In a bowl beat eggs with the sugar and vanilla. Measure the flour into another bowl and add salt.
When choc has melted allow to cool a bit, before beating in the eggs and sugar, then nuts (if using) and flour.
Combine to a smooth consistency, then scrape out of the saucepan into the lined pan.
Bake for approx 25mins. When ready the top should be dried to a paler brown speckle but the middle still dark dense and gooey. Remember they will continue to cook as they cool!
